Okay so I missed a day blogging. I cannot say yesterday was a stellar day but I worked hard.  It did not help that Sunday night I didn't sleep well, kept waking up hot. We had been to a Superbowl Party and I was pretty good staying with veggies and bean stuff wrapped in lettuce...but I slipped with a handful of potato chips.  The Bean stuff was good, look for recipe below.

So waking up I was Mrs. Grumpy Pants... as grandson Jonathan would say.  I skipped breakfast and lunch and did not eat until three in the afternoon...two more lettuce wrapped bean things... and Terry made us salads at six.  Between web updates on Contemporary Fine Art International (6 hours), Painting on the commission piece (5 hours), working on editorial for Western Art collector (2 hours), setting up my NEW VERIZON IPHONE (2 hours) I worked from six a.m. yesterday until 9 last night with no breaks but for food.  Today has to be better. Tonight we have our first meeting for the Franklin County Art Alliance. That I am looking forward to.

In the midst of the day yesterday,  I was called by the Franklin County Auditor asking if I was still a DBA because I had to fill out forms of what property I had here for my business.  At that point I told the gentleman I would just push it all out in the lake. I was pretty well done.  What else are they going to tax us on?  What is the purpose of taxing my paints and my easel?   I had several suggestions on avoiding things, but I will fill out their forms AND contact my congressman. What did happen to Don't Mess with Texas?   Please don't mess in my paints... my art stuff I have accumulated for 35 years. Inventory it all??? He calmly told me the law had been in place since 1982 but no one enforced it. Then suddenly all the county tax offices were being audited so they have to get these forms collected. I know I did not make his day any easier.

But about an hour later the new Verizon Iphone appeared and I smiled for the first time in the day.  I turned off my ATT iPhone and will now just carry one phone again. Can you see me SMILING???

Where was God in all of this?  Right beside me shaking His head at me. Every time I woke up last night I was worried about the Iphone soon arriving. JR told me at the party last night it was a 4 g Network phone and I said, NO it was not. I remember sitting up at three a.m. when I had to order it a week ago reading it was only a 3 g network.  JR said it was a 4 g because it was an iphone 4.  So last night I tossed and turned believing there must have been a place I missed when choosing my phone for a 3 or 4 g network. I wondered if Verizon would exchange it for me.  I knew I could get up and look on my receipts, but every time I rolled over and woke up I just worried about it.  God is still laughing at me loosing sleep and worry about something that did not happen. It is only a 3 g network but it is indeed an IPHONE 4 and mine is up and running. SMILE... yes God Smile with me. I could not pull out of my grumpy to give it over to you.  Lesson learned. 
Here is my bean wrap recipe...and boy oh boy it is GOOD.
Black Bean Lettuce Bundles

Serves: 4 — Prep Time: 10 minutes
Ingredients
  • 2 cups cooked or canned black beans, no salt
  • 1/2 large avocado, mashed
  • 1/2 green bell pepper, chopped
  • 3 scallions, chopped
  • 1/3 cup chopped fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • 1 clove garlic, minced
  • 1/3 cup mild salsa, low sodium
  • 8 large romaine lettuce leaves

Directions
  1. Mash beans and avocado together with fork.
  2. Mix with all remaining ingredients except lettuce.
  3. Place approximately 1/4 cup of filling in center of lettuce leaf and roll like a tortilla.

Arrival...Refrigerator?

Praying for everyone affected by the last two hurricanes.  My adventures today were the result of a dead refrigerator. I have loved my Kitchen Aid refrigerator very much. The first one in the 'French Kitchen' look died at 13 months. Hubby wanted the same refrigerator. Well this one made it four years and a few months. I cannot believe appliances are not made to last longer...but wait, is that because they make more money if we have to replace it in 4-5 years?  You replace your mattress at least every 7 years... and your washer dryer, you might get 7 years out of those... The stoves seem to make it closer to 10 years. We are Lowe's customers, and Robert ...
